Ferraro’s Las Vegas Hosts “Tartufi e Nebbiolo – Una Coppia Perfetta” Wine Dinner

Savor one of the season’s most anticipated indulgences – Italian white truffles – at a special wine pairing dinner on Wednesday, Dec. 10 at Ferraro’s Italian Restaurant & Wine Bar.

As Las Vegas’ longest running, family-owned and operated restaurant offering authentic Italian cuisine in a fine-dining atmosphere, Ferraro’s Italian Restaurant & Wine Bar has offered guests a five-star experience since 1985.

Tartufi e Nebbiolo – Una Coppia Perfetta (“Truffles and Nebbiolo – a Perfect Match”) is a special, one-night-only, 5-course dinner featuring seasonal white truffles from Alba, Italy, paired with Italy’s finest Barbaresco and Barolo wines.

The menu for the evening will include:

  • Crostini with burrata and fresh white truffles, paired with Contratto Brut by Giorgio Rivetti
  • Butternut squash gnocchi with hazelnuts, brown butter and sage sauce topped by fresh white truffles paired with Barbaresco by Produttori del Barbaresco
  • Seared truffle-butter-basted scallops over fontina polenta and black truffle cream with fresh white truffles pairerd with Barbaresco, Santostefano, by Produttori del Barbaresco
  • Broiled filet mignon with hotel butter served with cannellini runner beans, asparagus and fresh white truffle paired with Barolo, Le Vigne, by Luciano Sandrone
  • Crepes with chestnut cream served with hazelnut gelato and fresh white truffles paired with Brachetto by Marenco

Italian white truffles are widely regarded as the most exquisite of all truffles. They are grown in Alba, a city in Italy’s hilly Piedmont region in the province of Cuneo.

Their season runs typically from late October to late December. Truffles grow in the wild, where they enjoy a symbiotic relationship with mature oak, beech and hazelnut trees, from which they draw carbohydrates while growing underground. For this reason, truffles cannot be cultivated. That fact, together with their unmistakable rich and umami-filled flavor, makes truffles a universally rare and sought-after ingredient.

Wines made from the Nebbiolo grape, which grows predominantly in Italy’s Piedmont region, include Barolo, Barbaresco, Gattinara and Ghemme. Harvested in late October, Nebbiolo grapes produce wines renowned for their compatibility with food. These wines are generally lighter and more acidic than fruity, oaky California wines familiar to the American palate, and therefore are more adept at cleansing the diner’s palate.
